Cashews + Pistachios

Many years ago, when I was a baby, I was fed a food with my allergen in it and I experienced an anaphylactic reaction, and that's how we discovered my allergy. Growing up, it was difficult dealing with my allergy because It was very serious. It was also quite hard having to watch my friends and family eat the foods I couldn't eat. But one day i got offered the opportunity to do this process called OIT (oral immunotherapy), where you essentially get exposed to your allergen in tiny amounts and slowly start increasing the dose of your allergen that you eat. Although it seemed like an amazing opportunity i was still very anxious about it. It was hard to imagine eating the food i was told could seriously harm me. But i decided to do it, and despite all of the challenges and difficulties i persevered and after long 3 years i made it to a point where i can eat up to four cashews a day without any reaction. Unfortunately it does have some negative aspects to it, for example after I take my dose i cant do any athletic activities for 2 hours to lower the chance of a reaction, i also have to keep it consistent by doing it everyday with only a few breaks, which does make my daily life very challenging. But I am forever grateful for starting OIT because it gives me the freedom to try new foods that I could of never imagines eating before.
